Cilantro Lime Grilled Corn

Corn season is here! Enjoy my simple Cilantro Lime Grilled Cotija Corn!

Who doesn't love corn on the cob? For me it's one of the essences of summer even if it does mean that summer is winding down. It also reminds me of my Grandma. Oh how she loved summer and her garden. She would spend every moment she could in there tending to her plants and pulling weeds. I remember the first year I planted my garden. I was so excited to have the space to be able to do so at my new house. I planted every single seed I could get my hands on, and corn was at the top of that list. I remember as the end of summer approached, I called my Grandma stumped my the fact that my corn stalks had no corn on them. This was of course before face time and even before cell phones, so Grandma told me to take a picture of my corn stalks and email it to her. She called me after getting the email laughing. I responded: What's so funny, did you figure out what happened with my corn? Yes she replied, you only planted one row. I said, is that not okay to do?


You see, I was so excited by all the different seeds I had purchased, that by the time I got to the corn seed packets, I only had enough space left to plant one row of corn. Grandma chuckled and said sweetheart you have to plant at least two rows, preferably four because they cross pollinate each other. She went on to explain this whole process, and from that garden forward, I always planted at a minimum four rows of corn. As I got older and had kids, I loved using the stalks to decorate the outside of the house for fall.


Its been a few years since I've grown corn, but this recipe is one I make every year during the summer months, and fondly remember my Grandma, who taught me so much! The cotija cheese is so delicious in this recipe along with the cilantro, you will need to make extra because you will want seconds!
