With its bright color and tart taste, rhubarb is great for making delicious pies!
While you may not want to munch on the raw stalks — they're fairly sour — rhubarb becomes sweeter when cooked. And because it's so versatile, you can incorporate it into a variety of dishes. Strawberry and rhubarb are a classic pairing — the sweet and sour flavors balance each other out in an unexpected way.
Here in Washington State we are able to enjoy rhubarb into the summer months but if you live in an area that the growing season ends in Spring check out your local grocery store, you can usually fine rhubarb in the freezer section.
