Make this quick and easy lemon-scented pasta with a light, nutty sauce. The pasta cooks in lemon-infused water, giving it a fresh, citrusy flavor. The sauce is a simple blend of almonds, lemon peel, Parmesan, olive oil, and a bit of salt and sugar. Toss it all together with peas and fresh herbs for a bright, flavorful dish.
Perfect for a weeknight dinner or when you want something simple yet satisfying.
Recipe Ingredients:
½ lb fettuccine
1 lemon, zested (peel in long strips)
1 tbsp sugar
1 tsp salt
¼ cup raw almonds
¼ cup grated Parmesan (plus extra for garnish)
3 tbsp olive oil
½ cup frozen peas
Fresh chives, chopped
Black pepper, to taste
Recipe Directions:
Bring a pot of water to a boil with lemon peel, sugar, and salt. Once boiling, remove the lemon peel.
Cook fettuccine in the lemon-infused water until al dente. Reserve 1 cup of pasta water before draining.
In a blender, combine almonds, lemon zest, Parmesan, sugar, salt, and olive oil. Blend into a paste, adding pasta water as needed.
In the drained pot, add peas, pasta, and sauce. Toss with pasta water until creamy.
Season with black pepper and top with chives and more Parmesan. Serve immediately.
